Foodie Friday - Pineapple Souffle

Easter Sunday is a little more than a week away and you may be preparing your menu for Easter dinner. I am having family over after church and one of our favorite side dishes to serve with our traditional ham dinner is Pineapple Souffle. The sweet of the casserole goes well with the salty of the ham. I really like this recipe because it is easy to make, can be made the day ahead, and can be doubled or tripled as needed - all things that I appreciate when I am preparing my house for my large family and many friends.

Pineapple Souffle


1 stick of butter
4 eggs
1 cup sugar
5 pieces of white bread, cubed with crust
1 20 oz. can drained crushed pineapple

Cream butter and sugar together. Add eggs one at a time. Stir in pineapple and bread. Bake at 350 degrees for 50 - 60 minutes in a 7" x 11" casserole or baking dish until golden brown. Serve warm.
