Foodie Friday- Kids in the Kitchen

Aidan has been learning about eating healthy and making good food choices. Although he is pretty good with this, I decided to have him look through some cookbooks and help make a menu. He decided that he wanted to make dinner for the family the other night. Aidan had a great time looking through the cookbooks, making his menu choices, and he had fun helping me get the things from the store. His menu was unique, and his meal was yummy!

Menu:
BBQ Chicken Drumsticks
Popcorn with light butter and salt

Sliced Apples with Vanilla Yogurt

Sliced Red Peppers

Water to drink

Here is the recipe for the Chicken!

BBQ Chicken Drumsticks
8 chicken drumsticks
2 Tbsp. vegetable oil
3 Tbsp. BBQ Rub

1/2 cup apple jelly

1/4 cup ketchup

1 tsp. cider vinegar


Preheat oven to 375 degrees. Rinse chicken drumsticks and pat dry. Brush all sides of the drumsticks with oil. Rub the BBQ rub all over drumstick. Place in a greased 9x13 pan. Bake for 40 minutes. Mix jelly, ketchup and vinegar. Microwave about 1 1/2 minutes until smooth when stirred. Cover chicken with sauce and bake 20 minutes more.
